We’re passing the chef’s hat to you with the recipe for our Whole Grain Greek Couscous with Pine Nuts.

A vegetarian recipe, this makes a hearty and filling side dish for your next dinner or an easy make-ahead lunch option!

Thank you for sharing the recipe for this couscous salad. I had to go back for seconds when I enjoyed it at Sweet Tomatoes. Trying to eat healthy is so easy when dining there.

We ate at Sweet Tomatoes yesterday and I so enjoyed your whole grain Greek Couscous dish. It was absolutely delicious. We love you guys. We think that Sweet Tomatoes is the best and healthiest place to eat. We are so wanting you to build a Sweet Tomatoes in Surprise, AZ. We presently frequent the one on Bell Rd. in Glendale or Peoria (not sure). Glad you changed back to Sweet Tomatoes from The Field Kitchen. Keep up the good work!

As a nutrition coach and cooking instructor, may I comment that this recipe is a good start, but cannot really be considered heart-healthy because of the canola oil (100% pure fat, including saturated), and the feta cheese (cholesterol and saturated fat – the stuff plaques are made of). There are many great couscous recipes that do not contain oils or dairy which would be far healthier in the long run. Thank you.

Thank you for your insights! Yes, there are definite ways to improve upon this recipe but we also want to be sure that people enjoy eating it – otherwise, they may opt for something much less nutritious searching for taste.

There is no need to sacrifice taste for good health…. a common misconception. Vegan recipes are equally as delicious! Sweet Tomatoes is one of our favorite places to eat because we can find lots of fresh foods and at least one vegan soup typically. May we encourage Sweet Tomatoes to continue to expand the vegan options (also oil-free, just as Whole Foods is now doing on their buffet bars due to the growing number of people who are asking for it). Thanks!

Sweet Tomatoes, this is a great recipe and I appreciate you sharing it. And FYI “Cyd” you are mistaken about Canola oil being entirely bad for you. It actually is considered a “good fat” in that it contains high levels of cholesterol lowering fats along with very low levels of saturated fat. Cheese is cheese and many foods/dishes are not going to be attractive to vegans no matter what is altered. I, for one, don’t go to Sweet Tomatoes expecting everything to be in line with my own personal diet or preferences. I know that I have choices and appreciate the effort made to make many of them “healthier” to eat even though I will typically create my own healthy plate-creatively. There are plenty of specialty restaurants and cafes that cater to “vegan” diets and vegan” tastes btw.
